Honduras Pedro Erazo


Pedro Erazo is a small to medium-sized coffee producer from Honduras. His original plan was to
grow vegetables on his farm to make a living for him and his family, but soon realised that this
kind of crop was not providing him with enough to make a living. He knew of coffee producers
around him doing well, but as coffee plants take a few years to start producing cherries, just
changing crops wasn’t an easy decision to make.
He then decided to keep most of the fruit trees, especially peaches and avocados and started to
re-plant his farm with coffee. That first harvest was sold on the specialty market and Pedro
thought this could only be a miracle. He had the money to not only get out of debt but also to
start giving his family a better way of living. He then decided to call his farm: El Milagrito, ‘the
little miracle’.

» Picking of only red cherries every 15-20 days. Hand sorting at the wet mill
» Coffee is pulped same day as picking then dry fermented in concrete pools for 15 hours
» After dry fermentation, the coffee is washed 3 times
» Drying happens slowly on raised African beds inside solar dryers for around 12-15 days
» Beans are moved every 30 minutes to ensure consistent drying
» Moisture content reduced to 10-12%
