Colombia Jairo Arcila Anaerobic fermentation


Jairo Arcila is a third generation coffee grower in Quindio, Colombia. Father to our Colombia import partners, Carlos and Felipe Arcila, the co-founders of Cofinet.

This is our 3 third year working with one of Jairo’s coffees and we continue to love the unique characteristics that come from these stunning coffees.

The anaerobic process takes 30 hours, once complete the coffee is dried on raised beds to achieve 20% moisture. The coffee then goes into grainpro bags for 80 hours and then finally back onto raised beds to dry to 10.5% moisture.
